The best thing about this sauce is that you can bulk up the ingredients and make a big batch, freeze it and then whip it out when you have one of those I-don’t-feel-like-cooking-tonight moments.

Edgebaston Cabernet Sauvignon 2013
Thanks to the time that David Finlayson spent working at Chateau Margaux, this Stellenbosch wine is heavily influenced by the classic wines of the Medoc in the Bordeaux region. It has a lovely touch of mintyness that goes well with the beef in the Bolognese. While it ages beautifully, Wade recommends you pop the cork and enjoy it now too!

Kobus du Plessis has been doing some interesting things with wines on his Riversdale game and wine farm since he harvested his first crop in 2003. Thanks to the estate’s legendary winemaker Mike Dobrovic, this elegant blend of Cabernet Sauvignon, Petit Verdot, Cabernet Franc, Merlot and Malbec is smooth, with a full body. The hint of spice, berries and cherries complements this meat dish beautifully.
Glen Carlou Syrah Mouvedre Tannat 2013
Because Syrah comes with a punch of plums and berries, it goes wonderfully with tomato, which is a key ingredient in this dish. Young winemaker Arco Laarman’s uncomplicated philosophy to his craft has resulted in a perfect blend of Mouvedre and Shiraz grapes. The Mouvedre gives this youthful wine a rich earthiness you’ll love.
